Cashew

The cashew belongs to a group of foods, commonly referred to as “tree nuts”.  This group of foods is a significant source of allergens.

The target protein is cashew 11s globulin seed storage protein, which constitutes about 50% of total soluble protein.  This target was selected due to its abundance, allergenicity and distinguishability from the closely-related pistachio proteins.
