Mustard is widely used as a flavouring agent, as well as for its texture enhancing and emulsification capacity in various food preparations, particularly with salad dressings and meats.
The European Directive 2003/89/EC includes Mustard as a declared food allergen and as such, must be included where applicable, under the appropriate labelling laws regarding food allergens.
The ELISA SYSTEMS Mustard Seed Protein Residue assay is an enzyme-linked immunosorbent assay (ELISA) that may be used to screen appropriate food products for the presence of Mustard seed protein material.
Two common and closely related species of mustard seeds were used in the development of this assay: White Mustard (Brassica alba sometimes known as Sinapis alba or Yellow Mustard) and secondly, Black Mustard (Brassica nigra). The assay has been shown to detect the seed proteins from these species, as well as seed protein from another mustard seed: Brassica juncea (Brown Mustard).
